Nikki's Snacks and more...

 Salami Unwich

Good thing I had clean fingernails in this photo! That's one close up. The true star of this pic is this unwich. Wow, what an amazing snack this is. It's protein packed and full of flavor. If you have a dairy intolerance, or you're not a dairy fan, you could omit the cheese and it would taste just as great.

salame - no nitrates

small slice of cheese - organic if possible

1 slice of tomato - organic if possible

dollop of hummus - homemade is the best!

sea salt or pink Himalayan

Directions: Stack each ingredient and pop into your mouth, carefully. Try not to get hummus all over your face!

Peanut Butter Chocolate Chip Ice Cream

*Keep in mind that you will need to prepare this recipe 24 hours in advance. *

4 small frozen bananas sliced

1 cup chocolate chips (organic/dark)

2 tbsp peanut butter

Directions:  Slice and freeze bananas. Once bananas are frozen, using a Vitamix or food processor blend bananas until smooth. Add in chocolate chips, and peanut butter. Blend until all ingredients are incorporated. Make sure to not over blend because it will become a liquid. Scoop and serve.

There are many ways to make banana ice cream. It’s delicious to add strawberries or cocao powder too! The ideas are endless! Have fun! Feel free to post your creation on Facebook or tweet me

Apple party!

Apples need to have a little fun too? Right!? When you are really needing something sweet and savory, this is a must have snack or dessert. Watch out, they're addicting!

1 apple

1 tbsp peanut butter or any nut butter will do

handful of chocolate chips (make sure chocolate chips are soy free and do not contain dairy. You want high quality, and dark cocoa)

Directions: Slice the apple into 4 sections, slab some peanut butter and chocolate chips on top!
