SEXY TEX MEX Salad

This is the most ridiculously easy dish. I love easy and simple. I had left over ground beef from the night and decided I would make this for lunch the next day. Using left overs to create more dishes is the absolute best way to save time and still eat healthy.

I'm not sure why I decided to call this dish sexy, but for some reason I just think the colors and look of it is purely beautiful. The goat cheese compliments this dish well. If you've been following me, you know that I'm a goat cheese fanatic. There's no hiding that, it's in a ton of my dishes. The reason why I eat goat cheese is because it tastes amazing, and it's 99% lactose free. This is salad is great for lunch or dinner. Try it and let me know what you think!

Ingredients:

Goat cheese chunks 1 large avocado Diced organic tomato Left over ground beef

Directions:

Reheat ground beef over the stove (add salt/pepper/spices if needed), add tomatoes, goat cheese and avocados then enjoy. It's that simple, its silly.
