Nikki's Favorite!

Did I mention that figs are my absolute favorite fruit? If you love figs, you'll love this salad. 



1/2 cup cashews

6 sliced figs 

1 package of prosciutto (find no nitrates if possible) slice into strips

4 oz goat cheese

1 bag of mixed greens (rinsed) 

2 tbsp of pepitas (sprinkled on top) 



Directions:  Add all ingredients to the bowl and toss. 


Dressing: In a small bowl add 1/2 c olive oil, 1/2 c raw apple cider vinegar, squeeze 1 lemon, 1 tbsp organic mayo, 1 tsp dill, salt/pepper. Mix well and toss in salad.

Kick Ass Chicken Curry Salad 

This was a pretty cool video that I did capturing this awesome chicken curry salad.  The chicken comes from Trader Joes...We ate the chicken the night before and then I made the left overs into a delicious salad. It's really simple to make actually.  I used Just Mayo which is a non GMO, non soy mayo which is perfect for someone with hormone/thyroid issues. 



1 package of Trader joes curry chicken cooked and refrigerated 

2 tbsp mayo ~ add more if chicken is too dry at the end 

3/4 cup diced celery 

1/2 cup onions 

1/2 cup organic raisins 

1 cup roughly chopped cashews



Directions: Chop and dice all ingredients. Make sure the chicken is finely diced or else it will be too dry. Add all ingredients to a large bowl. Mix in mayo, add salt and pepper to desired taste. Add more mayo if the salad is too dry. Wash and chop salad greens and place chicken on top of the salad. 


Serve with lime. If you like dressing on the salad, dress the lettuce prior to putting on the chicken, that way the flavor of the chicken salad will complement the dressing rather than over ride it.

Rockin' Tuna Salad 

Do you love tuna? To be completely honest, I'm not the biggest fan of fish but I really love this tuna dish. It's salty, crunchy and savory. I use only wild caught tuna fish but be aware that tuna does contain mercury so don't eat this everyday! I coupled it with crunchy sweet potato chips that are super easy to make and superfoodlicious avocado. It's paleo, gluten free, wheat free and just down right good. 


ROCKIN' Tuna Salad 



Wild Caught Tuna can (drain water)- I suggest using this

1 diced radish

1 diced onion or shallots

1 diced celery stalk

1 tbsp paleo mayo - make your own recipe  by nom nom paleo   or I suggest this mayo (no soy & non GMO) 

sprinkled pink Himalayan salt, pepper 


Mix together in a medium bowl and BAM you got yourself an awesome meal! 


Sweet potato chips



1 sweet potato 

3 tbsp coconut oil 

Pink Himalayan salt 


Directions: With a sharp knife or Mandoline slice the sweet potato from end to end (make sure the slices are really thin). Using a non stick frying pan, melt coconut oil on medium/high heat. One by one fry the potato but make sure to not over crowd the pan. Flip and fry on the other side. Remove from the pan and pat dry on a paper towel. Immediately sprinkle with salt. Don't walk away from the pan, they burn easily! Also, make sure your oil is hot, or else the potatoes with end up soggy.  


Couple with avocado slices and sprinkle paprika over the tuna.
