OMG!! Goat Cheese Crepe 

First, I'm obsessed with goat cheese. To couple it with crepes is amazing! This recipe was inspired by the book, "Living Wheat Free for Dummies" .  The authors had an amazing idea to make crepes with protein powder. What a genius idea! 



4 eggs 

1/4 tsp vanilla extract 

1 scoop raw protein powder

8 oz goat cheese

4 tbsp grass fed butter  (1 tbsp for mixture, 3 tbsp for skillet) 


Directions: Using a blender, blend eggs, vanilla, protein powder, 1 tbsp butter and 1 oz goat cheese. Place the mixture on a hot, greased skillet  and wait for bubbles to appear, then flip. Add in goat cheese and fold in. 

Bananas and strawberries compliment the crepes well. 

The Ultimate Bacon Skillet  

Do you love skillets? Oh me, oh my, did someone say bacon? I am a bacon snob. I can only eat bacon that has no nitrates and has been humanly raised. I know that's crazy but one my heart goes out to the animal and on a selfish note, it tastes better. Here is my ultimate bacon skillet... 



1 package of bacon 

4 eggs

1 roasted red or orange pepper 

1/2 diced onion 

1/4 cup feta cheese 



Directions: In a large skillet cook bacon, drain fat into a dish (always reuse fat), take out bacon and put on paper plate. In the same skillet, sramble eggs, add in onion, peppers, bacon, salt and pepper. Top it with feta and enjoy!

By now, you can see that I'm obsessed with goat cheese! This omelet is seriously simple but oh so good. There's only 2 ingredients, that's it.  It's that easy.



2 eggs - organic and pastured if possible 

4 oz goat cheese 

1 tbsp sun dried tomatoes (optional) 


Directions: Beat eggs in a small bowl.  In a warm greased skillet,  add eggs. Once eggs are cooked on one side, flip over. Add goat cheese and flip eggs to one side.

The Best Smoothie EVER! 


This is a must try smoothie! Filled with good healthy fats great for your brain, antioxidants to fight harmful radicals, proteins to help build muscle, and potassium which is critical for heart health. 

Here's the ingredients: 

1 scoop of raw protein powder 
1 tbsp coconut oil (unrefined and organic)
1 tbsp almond butter 
1 cup organic berries - I get mine from Costco
1 banana (green if possible) 
2 cups of water or juice 


Blend and serve 

Chia Cereal 


This is one fun, incredible healthy breakfast!  My four year old even loves it.  You can make it dairy free by just adding water and not using yogurt. I do that all the time!


¼ cup hemp seed

½ cup chia seed

¼ cup goji berries

¼ cup dried cranberries

1 cup full fat plain Greek yogurt or Kefir OR pour warm water ½ inch over chia seeds ~ they will turn gelatinous.

3-4 raw walnuts pieces


Add raw honey more sweetness 


If you're a chocolate lover like me ~ feel free to add cocao nibs! 

Pumpkin Spice Scones 




1/2 cup softened butter

1 cup coconut sugar 

1 egg

1 teaspoon vanilla 

1/2 teaspoon baking powder 

1/2 teaspoon salt 

1/2 teaspoon cinnamon 

1/4 teaspoon pumpkin spice 

1/2 cup organic pumpkin puree (typically can)

1 cup coconut flour 


Directions: Preheat the oven to 350 degrees. Using an electric mixer, mix together butter and sugar.  Add in all other ingredients. Mix well. Using parchment paper, silpat, or greased baking sheet take a teaspoon of mix and form into triangles (just do your best). Bake for 20-23 minutes or until cooked through the middle (use a toothpick to see if it comes out clean to check if they are done). 




2 tbsp non-gmo powdered sugar 

1/4 tsp cinnamon 

2 tbsp coconut cream (full fat)


In a small bowl, whisk together and drizzles over top.


Nikki's Gluten Free Waffles 




3/4 cup applesauce 

4 eggs 

1 tsp vanilla extract 

2 tablespoons coconut oil (melted) or olive oil will do too 

1/2 cup water or alternative milk 

2 cups gluten free flour mix (I used Trader Joes) 

1 tsp baking soda 

1/4 tsp cinnamon 

1/8 tsp salt 

maple syrup and berries to top 


Directions: Using a medium size bowl, combine, applesauce, eggs, vanilla extract, coconut oil, water and whisk until smooth. Add in GF flour, baking soda, cinnamon, and salt. Whisk until fully combined and smooth. If the batter is too thick add a tad more water. Hint: the batter is supposed to be thicker than pancakes. Grease your waffle griddle and add waffle mix. Cook until slightly brown. 


Yields 5 waffles
